We envision a neighborhood restaurant with the best food in the county, with an ever-changing menu of truly seasonal offerings from local farmers and our farm.

In addition to using all of the fresh produce available, we will preserve and ferment these items as well, to take full advantage of the season’s bounty and create complexity within our menu throughout the year. The quality character will remain, just in fluctuating forms.

An open kitchen gives guests a view of all that happens in the back of the house. From rolling of bread, tThe Ice House-9 (1)o braising of chickens, and even washing of dishes – everything is on display so there is less disconnect between the cooks and the patrons. This will foster an environment of learning and transparency that engages the guest.

The aesthetic and feel of our space will respect the building’s steadfastness and we will repurpose material to update and renew its character.

The dining room will be a combination of large community tables and smaller private ones, surrounded by bricks, reclaimed wood, candlelight, windows overlooking Downtown Bryan, and an original mural of the State of Texas.

The Ice House has weathered over a hundred years of life. It is only fitting to create something that gives the building its due respect and to embody our restaurant with the same timeless staying power.

Quality in and of itself never changes, only the seasons really do, and we aim to capitalize on both.
